My dear friend was over for a visit, and what did we decide to do? Amongst the talking and catching up on our favorite shows… bake!
With all that pureed pumpkin I still have filling my pantry and freezer, we decided to use it, and she had the perfect recipe.
Spicy and warm, with the taste of pumpkin… and just as all those tastes are floating through your mouth, the chocolate melts it into sweet harmony. The best part, this recipe is SO easy!
Our recipe:
1 box spice cake
1C pureed pumpkin
2 eggs
2/3C water
12oz chocolate chips
Mix all ingredients well. Place into muffin tin. Bake in oven preheated to 325 for 20 minutes.

I’ve made three batches of these since printing the recipe on Dec. 17th! They are simple and delicious! My four-year-old ate the last one this morning and informed me that I really need to make them everyday so we never run out.
Oh, I used the mini chips on this batch. I liked it better.
