Because there is always a good reason for pancakes. Especially the fluffiest buttermilk pancakes (made easy by just adding water!) with gingered strawberries and cream! These strawberries have a hint of ginger candies and I love a good dollop of vanilla greek yogurt on my pancake stack as well. SO GOOD and slightly addicting, too. Oh, and don’t forget that drizzle of pure maple syrup on top.

In our house, we’re a fan of pancake days. Maybe it’s partially the fact that the name pancake has the word “cake” in it or the delicious and truly versatile flavor options, but pancake days always feel like a celebration!

In fact, sometimes while meal planning, we like to add breakfast for dinner to the meal plan lineup, and our kiddos get just as excited, especially when pancakes are involved.

To get all of the flavor combinations, start by whipping up fluffy Krusteaz pancakes, top with a dollop of vanilla greek yogurt (which also gives some added protein!), add gingered strawberries on top (recipe below), and of course you can’t forget a drizzle of maple syrup to complete.

Gingered Strawberries
The perfect pancake topper, these gingered strawberries have a hint of those delightful ginger candies and make for slightly sweet and spicy pancakes with strawberries and cream.
Ingredients
- 1/4 C honey
- 1 tsp ginger, grated
- 1 cup strawberries, sliced
Instructions
To make the gingered strawberries, bring 1/4 C honey and a dash of freshly grated ginger to a simmer in a small saucepan. Let cool slightly and toss with 1 cup of fresh, sliced strawberries.
