The best part of cold winter Saturday mornings is making a gooey, tasty dish for a late breakfast… on these ‘in-between’ days, where ‘nothing’ is the best part of the day. These in-between days we can lounge about in our pajamas, spending hours cuddling with fun books, tickling and laughing. These days call for something special, baked fresh from the kitchen. Sticky, sweet cinnamon goodness. I love the taste of winter.
Our recipe:
1 egg
3 1/3 C flour
1/4 C sugar
1 tsp salt
or
Cream cheese frosting~
4 oz cream cheese, softened
1/4 C butter, softened
1 1/2 C confectioners’ sugar
1/2 tsp vanilla extract
1 1/2 tsp milk
Dough~
1 C warm water
1 egg
3 1/3 C flour
1/4 C sugar
1 tsp salt
Filling~
1 C brown sugar
2 1/2 Tbs ground cinnamon
1/3 C butter, softened
Sugar Glaze~
1 C powdered sugar
1/2 tsp vanilla
2 Tbs milk until smooth enough to drizzle.
or
Cream cheese frosting~
4 oz cream cheese, softened
1/4 C butter, softened
1 1/2 C confectioners’ sugar
1/2 tsp vanilla extract
1 1/2 tsp milk
Place yeast in the warm water. Let stand 15 minutes. Cream egg, butter, and sugar in a mixing bowl. Add water/yeast mixture. Stir well. Slowly add dry ingredients to wet mixture. Mix well.
Knead dough for about 8 minutes. Place dough in greased bowl, cover and let rise in warm area for about 30 minutes.
Roll dough into 18 x 12 inch rectangle on lightly floured surface. Spread softened butter on top. Sprinkle with sugar and then cinnamon. Add whatever toppings you’d like. Roll up tightly, beginning at a small end. Cut into 12 rolls . Place in greased 9 x 13 baking pan. Cover; let rise in warm place until double in size, about 30 minutes. Heat oven to 375. Bake 25-30 minutes or until golden brown.
While rolls are baking, mix ingredients for glaze or beat ingredients together for frosting. Spread over warm rolls before serving.
